Abstract:
The aim of the article is to explore theoretical and methodological approaches to modeling business processes of catering enterprises and to substantiate the feasibility of implementing automation tools in the operations of an eco-cafe to enhance operational efficiency, management transparency, service quality, and ensure the principles of sustainable development. The study summarizes theoretical approaches to modeling business processes in the catering sector, identifies the key business processes of the eco-caf?, and determines the main problem areas in their functioning. The relevance of the study is substantiated in the context of digital transformation and the growing demand for environmentally oriented services, while the appropriateness of using modern process modeling methods and digital automation tools to optimize operational activities is demonstrated. Based on the analysis of the studied eco-caf?, it is proposed to use PEST and SWOT analysis of the enterprise’s external environment, the Strategic Goals Tree, the BCG matrix, and the Canvas business model to model processes and identify bottlenecks subject to automation. Prospects for further research include analyzing efficient digital management systems operating in practice at the Eco-Caf? «GREEN TIME»; evaluating the economic, environmental, and social results achieved through automation; as well as the further development of user-friendly management models that integrate business processes, management of employees, and sustainable development principles, taking into account the capabilities of small and medium-sized catering establishments.
